Its lunch or dinner can be made and eaten anytime.

Ingredients for Stuffed Eggplant
Eggplant – 1/2 kg
Chopped Onion – 1
Coriander Powder – 2 tbsp
Fennel powder – 1/2 tsp
Grate ginger – 1 inch
ground garlic – 5 buds
Chili powder – 1/2 tsp
Cumin – 1/2 tsp
Green chili paste – 1 tbsp
Turmeric – 1/2 tsp
Garam Masala – 1/2 tsp
Asafoetida – 1 pinch
Amchur powder – 1/2 tsp
Chopped coriander – 3 tbsp
Oil – 4 tbsp
salt to taste

Stuffed Eggplant Recipe
To make stuffed brinjal, first wash the brinjal and cut it into four pieces. Be careful not to throw off the stalks of the eggplant. Now take a pan and put one spoon of oil in it and heat it on medium flame. Then add coriander powder, red chili powder, fennel powder, turmeric, chopped onion and garlic paste and mix well. Then add green chili paste, mango powder and salt as per taste, mix well and fry well. After this your masala is ready to be filled in brinjal.
Now take finely chopped brinjal and mix the roasted spices by hand or with a spoon. Heat oil in a pan. When the oil is hot, add cumin seeds and fry them. Then put the spiced brinjals one by one in the oil. Now let the brinjals cook for 8-10 minutes. Meanwhile, cover the pan and reduce the flame to low. Meanwhile keep checking the status of the brinjals. When the brinjal is cooked from one side, flip it. When the brinjals are cooked, turn off the gas. Delicious stuffed brinjal is ready for lunch or dinner. Serve with chopped coriander leaves.
